Taiwan pineapple cake is a small baked pastry with a soft pineapple-based filling inside a crumbly outer crust. The Chinese name is 鳳梨酥 (fènglí sū). Taiwan’s Ministry of Education describes the form as a shaped and baked dessert commonly made with pineapple and winter melon, plus butter, egg, flour, and sugar. Taiwan Ministry of Education
What this Atlas record covers
This record covers the familiar square Taiwan pastry form. It does not treat every pineapple dessert, Southeast Asian pineapple tart, or fruit-filled biscuit as the same thing. The core structure is a baked crust enclosing a pineapple-based filling.
Filling formulas vary. Taiwan Agriculture Tourism distinguishes pure-pineapple cakes from a traditional pineapple-and-winter-melon version. The latter can give a rounder sweetness while pure pineapple may keep more fruit fibre and tartness. That is a formulation difference, not a reason to create separate Atlas records. Texture, flavor, and method
The Atlas uses sweet and fruity as a concise comparison, and crumbly and soft for the contrast between the pastry shell and filling. Taiwan’s Tourism Administration describes pineapple’s sweet-sour character with a loose, soft outer skin. The Ministry of Education definition explicitly supports shaping and baking, which map to the high-level methods molded-pressed and baked. Recipes, filling ratios, butter level, and individual bakery textures vary. Taiwan Tourism Administration · Taiwan Ministry of Education
Taiwan association and what it does not claim
Pineapple cake is widely presented by Taiwan’s agricultural and tourism bodies as a Taiwan dessert and souvenir. That makes it useful for a Taiwan exploration route, but it does not prove one city, bakery, or historical origin for the broader record. The Atlas therefore leaves the origin field unset. Ingredient and allergen note
Common formulations may contain wheat flour, butter or other milk ingredients, and egg. A current Taoyuan food-safety disclosure for pineapple cake lists milk ingredients and egg alongside flour and pineapple filling; it illustrates why this record flags wheat, milk, and egg as common allergens instead of treating any version as safe by default. Check the package and ask the producer about the exact formula and cross-contact controls. Taoyuan food-safety disclosure
